土曜日のランチに訪問。食べログから前日に予約しました。
頂いたのは「Menu Saison」11000円のランチのコース。
⚫︎赤パプリカのムースを詰めたパニプリ
パニプリというエスニックなカリッとしたスナック生地の中に赤パプリカのムースからその苦味、貝が弾力のある食感、ライムの爽やかな香り。雲丹も使われて。
⚫︎「フェンネルのシートで包んだアオリイカのタルタル 季節の豆のヴァリエとイカ墨のソース」
フェンネルのシートからほんのりハーブの香り。淡白なアオリイカにキャビアでコクを足して。イカ墨のソースは香り強め、スルメも使ってるとの事。様々豆が食感を変えて。
⚫︎バケット
ルクセンブルクのバケット。現地で作り瞬間冷凍して運んだものと。
薔薇の形をした発酵バターから薫香の香りが染み付いていて付ける度に薫香を感じました。
⚫︎「フォアグラのフォルダン キールロワイヤルでコンフィしたグリオットと合わせて」
フォアグラのフォルダンは滑らかな舌触り、フォアグラの塩気、コクが美味しい。
鹿のツノような形をしたスパイスの効いた生地を挟んで、グリオットにはキールロワイヤルというカクテルでジューシーに。グリオットの中にはマスカルポーネとハーブのタイム。
メレンゲに胡椒、パウダーからは桜の香り。
全てのキャラが立っていてフォアグラにしては軽すぎず重過ぎず主役になりすぎずオーケストラのような素晴らしいハーモニー。
⚫︎うなぎパイN°8
シェフが静岡県出身という事です静岡のうなぎパイをオマージュして。
鰻は小麦粉を塗して蒲焼き風に。ソースはグリーンカレーでピリ辛。ココナッツカプチーノ、玉ねぎのピュレが円やかに。きゅうりはソテーされ柔らかく。
オーブンに掛けられたフルーツトマトの少し凝縮された甘味がアクセントに。
ヤングコーンも使われて本当にグリーンカレーのテイストで面白い。
⚫︎「フランス産発酵バターでポシェしたアイナメ 阿寒湖エクルヴィスのラヴィオリとソースナンチュア」
しっとりと上品で淡白なアイナメの上にチョリスを薬味的に。
ソースにはサラッとしてるけど魚介の風味が濃厚なソース。バターではなく生クリームが使われていると。
右側にはパスタ生地の中にザリガニがありプリッと弾力あり塩味とハーブが爽やかに香り。
えっ⁉︎ザリガニ食べるの？と思ったけど普通に美味しく誤解を恐れずに言えば海老小籠包的な。
⚫︎仔豚のロースト
ソースにはオレンジ・白ワイン・スパイスのクミンも使われ少しエキゾチックな味わい。
皮目カリッとクリスピー状に焼き上げ赤身はしっとり肉汁旨味を多く含み豚のほんのりとした甘味
右上の豚バラ肉はホロホロと崩れる柔らかさ。
添え付けにはホクホクとしたアーティチョークのバリグールからバニラの香り。
⚫︎デセール
「ハイビスカス風味の赤い果実のコンフィ ミントのアイスを添えて」
ればーぶ
緑色のがミントのアイスです。ボール状の丸いものはホワイトチョコのムース。
見た目が美しいので躊躇しましたが混ぜちゃった方が複合的な味わいが仕上がってで美味しかったです。
パティスリーのスイーツに無いルバーブが使われているのが僕には特徴的に感じて、シャキシャキとした食感がアクセントに。
⚫︎紅茶とミニアルディーズ
ミニアルディーズにはマカロンやフィナンシェなど。
シェフはロブション出身との事で、味わいの色がはっきりしていて味わいまでカラフルなところにロブションぽさを感じました。
ドレスコードがあるようにある程度格式のあるフレンチ。肩肘張らずという感じではない分、気品のある空間のお店。ソムリエさんとの会話も楽しめた(*´ω｀*)ゞ
土曜日のランチで2組しか入ってないのは気になったけど僕は良いお店だと思います。
料理はシーズン毎に変わるとの事で違う季節でまた来てみたい。
