トリュフのグジェール。中はトリュフクリーム、上にはスライストリュフ。常温にて供されたこともあって、トリュフの香りを存分に感じられました。

落花生のクレームに浮かべた和牛のタルタルサラダ ピキオスのジュレと合わせて。赤いものはセミドライトマト、緑のものはパセリピューレ。落花生特有の風味や和牛の甘み。複雑だけれど、何故ほっこりする美味しさ。

パンと燻製バター。写真は2人前。メイン前にも別のパンが供されます。パン自体は普通だけれど、燻製バターが美味しかった！燻製の香りがプンップンッ！！

なめらかにしたフォアグラのフォンダン プルーンとポルトのジュレでコーティング オレンジとスパイスの香りを合わせて。スペシャリテのフォアグラ。季節によって使うフルーツを変えていらっしゃるようです。

流石に美味しい…フォアグラの甘みとほんのりとした塩気、プルーンの甘みが、蜜柑の酸味によってはっきりと味に輪郭が生まれる。ダージリンとバニラのクリーム、スパイスを香らせたチュイルも合わせると美味しい！

うなぎぱいN°15。こちらもシェフのスペシャリテ。焼き上がった物をお見せいただきました。

浜名湖産の鰻はふわんふわん。中には、ポルチーニ茸と蓮根、栗。まろやかな赤ワインソースと頂くと、説明不要の美味しさです。

付け合せのサラダ。ナッツが入っていたりと、こちらも凝ってる。

甘鯛の火入れは勿論だけれど、何より驚いたのがこの組み合わせ！シャインマスカットとイクラ…？と思ったが、程よい塩気と爽やかな甘みが堪らない！蕪と焦がしバターのソースも日本食とフレンチの融合を感じる。

香ばしいイベリコ豚 赤茄子のブレゼと黒ゴマのソース 八角風味のジュレと共に。担々麺から発想された一品とのこと。素材を殺さない絶妙なスパイス加減と何より火入れが最高。

洋梨のマリネと糖化米のグラス アーモンドのヴェールで包みこんで。何と、銀色の飴細工以外は砂糖不使用。でも、しっかり甘みを感じる。糖化米のグラスはマッコリのような風味とまろやかな甘みが癖になる。

元々ロブジョンで活躍されていた方のレストランです。
ランチに伺いました。
結論、リピートしたいぐらいに良かったです！
以下印象に残った点。
①このお値段(12,100円)設定がおかしいほどに、凝っている。
見た目の繊細さはもちろん、自家製パンや自家製いくらなど…シェフ休んでる？と心配になるほど手間がかかっている。
もちろん味も美味しかったです！(詳細は写真のコメント欄にて)
②サーバーが増えたら、鬼に金棒
4卓を何とほぼお一人で捌いていらっしゃいます。(時折平野シェフがいらっしゃる)
勿論サーバーが多いグランメゾンに比べるとやや物寂しい感はありますが…
それでも我々の会話が弾むような話題やちょっとした笑い話をご提供いただいたり、卓越した感性とスキルをお持ちだなと感じました。
強いて言うのであれば、ボリュームが足りないですが、それでも大満足。
