食べログ予約で席だけ取っておいたのですが、壁の板短冊メニューには、見た事も無い、初めてのお料理が並んでいるので、やっぱりアラカルトよりコースの方が分かりやすく感じて、一番下のコースをお願いしました。
メニュー構成は、
白桃冷静スープ
牛たんのコンビーフ
プラチナユッケ
舌二種食べ比べ
下のどちらか一つ
・ハツの串焼き
・レバーの串焼き
レタスとクレソンのサラダ
肉の魔球、巻き寿司からの変更してくださり、とろける肉たたきを握り鮨で頂きました。
黒毛和牛の照り焼き
甘味
と、こんな感じです。
舌(タンと呼んでいます)の本当の美味しさを初めて知りました。
三十日熟成 金舌(アメリカ産)も良い味ですが、氷温熟成国産牛タンステーキには、驚きました。
肉の旨味の詰まったみずみずしさ。
初めての味でした。
レバーも生ではないけれど、生の味を思わせるみずみずしさ。
こちらでは、みずみずしいお肉が頂けるのです。
水分でみずみずしいのではなくて、肉の旨味をみずみずしく感じる不思議。
やはり、元々新鮮で素性の良い極上肉を熟成されたり、調理なさるからなのでしょう。
調理にも様々な工夫を凝らされていらっしゃいます。
火を入れすぎない肉の美味しさが沢山味わえて、嬉しい驚きでした。
調理長の藤田さんも、説明がお上手で、いろいろお心づかいもして頂き、素晴らしいお食事になりました。
次には、彼のお任せで、その日入っている良い物を中心に頂いてみたくなりました。
地下は、個室が三つ有り、お料理もカラオケも楽しめるとの事。
少人数でのプライベートパーティーに良さそうです。
お料理にも、まだ知らない物が沢山あるなんて、この日知った衝撃でした。
