今日もペルー料理です。今日のお店は白金台駅から徒歩5分程度、プラチナ通り沿いにあるオシャレなペルー料理店さんです。2015年オープン当初に行ったんですが、2020年6月よりコンセプト変更したとのことで再訪問です。
「CENTRAL」とか「Maido」とか『世界のベストレストラン50』のトップ10にランクインされるペルー料理ですが、元々ペルーには「Comida Nikkei（コミーダ・ニッケイ料理）」というジャンルがあるんだそうです。食文化が豊かなペルーでその地に住む日系人が生み出した、「ペルー料理」と「日本の食の技術」を掛け合わせたのがコミーダ・ニッケイ料理。もう100年も前からペルーで確立されてきた一つの料理ジャンルだったんですって。生魚を食べるという珍しい食文化や、気候が豊かな土地で育った食材そのものを楽しむ食文化が日本と似ていることが背景らしいです。そんなペルー×日本を掛け合わせたコミーダ・ニッケイ料理をモダンにアレンジし「コンテンポラリー・ペルー料理」とコンセプトを新たに掲げて提供し始めたそうです。
ということで、素敵なペルー料理を召し上がります。
■カウサ・レジェーナ：ライムと唐辛子で風味づけたインカのめざめ～サーモンのガトー仕立て～
■セビーチェ・トラディショナル：ライムとリモ唐辛子風味の本日の鮮魚のマリネ
■パタラシュカ：本日の鮮魚と魚介のバナナの葉包み焼き
■セコ・デ・レス：国産牛ホホ肉のコリアンダー煮込み カナリア豆添え
■アロス・コン・レチェ：ライムに見立てたペルー風お米のムース スパイスアイス添え
全体的にカラフルで遊び心のある美しい盛り付けが特徴。味は日本人に合うようにアレンジされているだと思いますが、異国感も感じられます。
こういうペルー料理屋さん、これからも増えてほしいですね。
