Shimaya is a large piece of meat served perfectly cooked. First, let's start with the bird tataki. Instructions to eat in 20 minutes. While I was working on the liver, I was also reaching out with my chopsticks for the ohitashi, when a skewer appeared. Unfortunately, I couldn't eat it that day because the celery was cut. However, what is impressive about the fillet is the fine makimi. It was so fluffy and crispy that it was just too exquisite. Finish off with a lantern and enjoy your meal. It's the Shimaie style that makes me want to do it sometimes. I'll come again.
