白金の蕎麦屋『蕎倫』がオープンしたのは2017年。
もともと同じ建物ではご主人のお父様が和食料理店「割烹井上」を経営。同店で蕎麦作りを担当していた息子さんが蕎麦専門店としてリニューアルをしたそうです。蕎麦の技術は、同じく白金にある人気蕎麦屋「夢呆」で学び、日本料理の技術を幾つかの料理店を渡り歩いて腕を磨いたそう。結果として、レベルの高い蕎麦前とクオリティーの高い蕎麦を楽しめるお店に仕上がっております。外看板にある「蕎麦と肴と酒」が同店の魅力そのものでございます。
蕎麦前において絶対に食べてほしいのが「厚焼玉子」。玉子焼きはふんわりと口当たりがよく、驚くほど旨味の強い出汁を巻きつけております。なかなかこのレベルの厚焼玉子に出会えるものじゃありません。日本料理を学んできたご主人の技術がしっかり詰まっております。「まぐろのなめろう」はお酒のお供として完璧。
蕎麦もさすがでレベルで、「せいろ」の香りの良さなど抜群。ついでにつけ汁や蕎麦湯まで抜け目がない。「豚カレー蕎麦」にあってもカレースープにおける出汁のレベルに舌を巻く。これこそ、蕎麦屋のカレーというやつだ。カレースープには絶対うどん派ですが、あっさり感のあるスープには蕎麦も相性がいい。
