【白金高輪】”鮨 無何有”
白金高輪駅すぐのところにある寿司店。
特徴的な外観の一軒家レストランで、2階は同じ系列のワインバー。ここでお寿司を食べながらワインバーにあるワインを楽しむこともできるのだそう。
内観は黒を基調としたシンプル且つ洗練された空間。大将はフレンチご出身
この日いただいたのは17:00〜の早めの時間からのみのショートコース。
ショートコースとはいえ一品料理4~5品に握り9貫と、しっかりお腹が満たされる十分なボリューム感です。
クエはお醤油と塩2種類の食べ方で。どのくらい寝かせてるんだろう？淡白な味わいで旨みが凝縮されています。
蛸の柔らか煮は程よく弾力を残した好みな蛸でした。
握りは中トロからスタート。シャリは赤酢シャリで、やや硬めですが大きめな輪郭のお米で存在感があります。
かますは、内側を炭火で炙ってあり(?)ふんわり香る炭火の香りが印象的でした。
BGMはなく緊張感ある感じかと思いきや、大将がフランクな方で気さくに話しかけてくださりとてもリラックスして楽しむことができました。
ショートコースは1日2組限定なので枠は少ないですが、これだけの内容なら大変お値打ち…!!
