Stylishly located on Shirokane Platinum Street, "Yakitori Fire Farm". Visit us at the New Year's party to taste your favorite Date chicken. On this day, too, I was hungry, and the 20-minute walk from Hiroo Station on the Hibiya Line was nothing to do. The platinum-colored nameplate in front of the entrance on the second floor is an approach that raises expectations at the end. I was greeted with a dashing voice. After wishing the general a New Year's greeting, the long-awaited course begins. Dishes are only served in selection courses. Basically, skewers are on a stop-order system, and the menu consists of rice dishes. It starts with the thick meat but gently unravels the scissors, and the texture of the flesh makes the sauce bounce and matches the flavor. The salty air that resonates in the clear stirrups gives it an outline, and the green onions that swell the sweetness in the fat of the meat that intersects with the sauce explode the deliciousness as modeled! The aroma you feel in the texture of the skin is unbearable, chicken dish when you untie it, the crisp flavor of the minerals dyes your mouth at once and fuses with the sauce. The texture of the coarsely ground and the flavor that swells softly, and the deliciousness of the finest tsukune that is formed as one with the sauce while being hot, By the way, there are skewers that firmly capture the heart in addition to chicken. The sweetness and astringency of the sauce and the pepper attack each other in a fresh way. The juicy moisture that explodes in the mouthfeel like Steak, and the salt and pepper that makes you swim in it create a special taste. Even cherry tomatoes melt like paper lanterns and have plenty of sweetness with saltiness and pepper. What they both have in common is the high core temperature. It has already become a favorite and is my second visit to "Yakitori Hiku". This Yakitori (grilled chicken skewers) restaurant is the fourth restaurant of the Yakitori Abe Group and inherits the taste of Date chicken as a lineage of Torishiki. In order to get hungry as much as possible, I walked slowly from Hiroo Station on the Hibiya Line for less than 20 minutes. The back view of a customer heading to the counter can be seen in the building lights along Shirokane Platinum Street. There are few cars on the street, and the quiet area creates a sense of seclusion. On this day, I used it for a dinner for 4 people from 19:30 on the second rotation. Mr. Yasuo Mizushima, the owner of the store, treats me with a smile that is much more relaxed than last time. The disciple also supports the space dignified with a tight twisting bowl roll. Each bite of each part of the chicken is cut into thick pieces and skewered. Yet, it is soft without feeling thick and juicy with charcoal fire! Salt such as scissors and hatsu ni seri, resonates with the sweetness of the clear flesh, and sometimes the sauce is entangled smoothly like wrinkles and quail, and it is so rich that it is reminiscent of Kansai-style eel, like the neck skin. The texture enhances the deliciousness of the gizzards in the yagen cartilage so as to add to the taste of each bite. Steak In addition to the Daikokumoto shimeji, which gives a satisfying taste like a chicken, shishito and yam are also insisted on with a taste that is as good as chicken. All of them are skewers that convey the deliciousness more firmly as the core temperature is higher. Order stop with carefully skewered paper lanterns. 「白金台 焼鳥 火團」伊達鶏のクリアな旨味がストップを許さない、定番=安定感抜群の焼鳥×ワインのマリアージュ!
白金プラチナ通りにスタイリッシュに佇む「焼鳥 火團(かだん)」さん。
今年6月にオープンされたばかりの注目の焼き鳥店。
焼き鳥×ワインをコンセプトとする「やきとり阿部」の手掛けるグループ店となり、「やきとり結火」「やきとり陽火」に次いで4店目。
ミシュランビブグルマン掲載2店舗の実績を誇り、期待を胸に会食でお伺い。
場所は東京メトロ南北線白金台駅より徒歩7分ほど。
白金プラチナ通りの落ち着いたエリアにある新築のビル2階となり、表からはガラス張りに映るお客さんの後ろ姿が何とも大人な雰囲気を醸し出します。
内観は天井の木目と土壁に間接照明を調和させた和の空間。カウンターが一直線に8席広がり、細長い造りを綺麗に活用された和モダンの素敵な舞台。
やきとり阿部で2年間修行を積まれ、以前にやきとり陽火でも裏方としてお見かけしたことのある水島康生氏が店長として腕を振います。
お料理はおまかせコースのみの提供となります。
基本的に串はオーダーストップするまで出続け、〆にご飯物といったメニュー構成。

やきとり陽火の再熱!
伊達鶏がやっぱりおいしい!!
お気に入りだった「やきとり陽火」さんでは以前の大将の時に使用していたのがやきとり阿部と同じ伊達鶏。(現在は黒さつま鶏に変更)
精肉と串打ち、焼き上げる技術にもよりますが、やっぱり落ち着く伊達鶏の味。
一串ごとにしっかりとあぶらを弾かせながらも、すっきりとしたクリアな旨味の統一感が口に心地よく馴染んでくれ、何本でも食べれてしまうほどに気付けば野菜も含めて19本!
野菜もしっかり瑞々しさをも持たせながら、口で炸裂させると同時に乗せた塩や胡椒がグッと素材の旨さを引き立てる!
腹八分目のところで敢えてストップ。
ちなみに串のストックがあれば同じものでもオーダー可能。
今回はボディービルの大会を控えた方が居たため、脂身の少ない部位を選んで出して頂きましたが、まさにスッキリとした後味の連続。
〆には【TKG・そぼろ丼・担々麺】が選択可能。
いつも選んでしまいがちなそぼろ丼を選択。

レンゲですくい上げてもどこまでもそぼろ!
出汁感がふんわり立ち上がり、優しい甘みを口いっぱいに感じさせる美味しさ!
初めてのお店ながら自然と居心地の良さを掴めて、会話もよく弾んでくれた楽しい会食となりました。
いやー、またちょっとハマってしまいそうな焼鳥店と巡り合ってしまいました!
こちらのグループのスタイルとして焼鳥にワインというコンセプトの響きの通り、ワインをお好みに合わせて複数銘柄から丁寧にアテンドして頂けるため、ワイン初心者でもハードルの低さが嬉しいポイント。
まだ比較的に予約は取りやすいと思われますが、あっという間に予約困難になること必至。
白金プラチナ通りにその佇まいを抑えきれない大人の隠れ家。

すっかり毎回楽しみな定期訪問となった「焼鳥火團」さん。
今回は初めての貸し切り会で利用をさせて頂きました。
少し早めに到着すると、変わらない笑顔で迎えてくださる水島大将。
カウンター中央の焼き場の正面に陣取り、大将とも掛け合いのし易いポジションと焼き上げる臨場感。
待ち焦がれた8名のゲストが揃ったところで一斉スタートとなりました。

抜群の安定感を誇る伊達鶏の魅力であふれる一本!
もう少しで20本に届きそうな19本でフィニッシュとなりました。
野菜を含ませながらもこれだけの串をテンポ良く食べても全く食べ疲れしない。
伊達鶏のクリアなあぶらと丁寧な味付けがお酒を誘っていき、気付けば皆さんでワイン3本と日本酒1本。
そんな日本酒は思わずラベルで即決してしまった小布施ワイナリーの"サケ エロティック"を所望!
しっかりとした甘みと酸味を伝えると同時に、苦みが味を引き締めるように、ハイトーンで響かせながら消え去る大人の味わい。
国産ワイナリーがワイン作りを終えた間だけに生産される期間限定酒には、ブルゴーニュ・ドメーヌのようなプライドを込めた日本酒と言える。
対面して大将とお話すると、伊達鶏に対する熱意がしっかりと伝わってくる。
元々、大衆系焼き鳥店で大山鶏を扱っていたんだそう。いつしか伊達鶏の味わいに出会い、伊達鶏が扱える焼鳥店としてやきとり阿部グループの門を叩いたのを切欠に、現在はこちらのお店を任されるほど。
伊達鶏の味わいを見極め、その焼き方や味の乗せ方など経験を積んだ水島氏が最良の状態に仕立てた一串。
職人と食べ手の双方が求める利害が一致する瞬間なのかもしれない。
そして誰と食べるかによっても味わいを大きく変えていき、最高の仲間と楽しむ白金台の隠れ家。
今回より増えたメンバーの皆さんに喜んで頂けたのは言うまでもない。
大人のシーンに向けて自信を持って紹介したい焼き鳥の一店です。
