12年振り2回目の訪問。
Bon Chemin(ボン シュマン)は五本木のフランス料理店で、2002年創業という老舗だ。東横線の学芸大学駅と祐天寺駅のどちらからも離れている立地で、地元民でないと行きにくいかもしれない。
レンガ造りの壁と、模様のついた布地をあしらったベンチ シートが、温かみを感じさせる内装。コースのみ。
突き出しは鮎のパテ。原型は留めていないが、鮎独特の苦味を感じさせる。定石通り瓜系の野菜も添えてある。
次の皿は、メヒカリのフリットという意表を突いたもの。素材もパリパリとした食感も良い。
鰹のカルパッチョは、添えた野菜も新鮮で美味しい。
ガスパッチョは、スープというより具材主体の調理。鮑や丁寧に煮た茄子が上質で、蛤のスープも中々のもの。
今度は一尾で出てきた鮎は、焦がしバターのムニエルという意外な調理法だが、これも美味しい。
オマールのパイ包みは、とても良かった。濃厚なアメリケーヌ ソースから立ち上る香りが鼻腔を刺激する。パイの食感は軽く、詰め込まれたオマールは凝縮感がある。
牛肉は硬すぎもせず柔らか過ぎもせず適度な食感で、酸味を湛えたマヨネーズ状のソースも良く合っている。
デセールはアイスクリームとメレンゲという手堅いものだったが、メレンゲの食感はとても軽い。
この店は老舗で、古典を踏まえながらも時代に沿って進化した料理を供している。立地が不便だが、東横線沿線の人なら訪れる価値があるだろう。
