対馬のアナゴ、三河のアサリ、九十九里の蛤と、さりげなくフリッター、ジュレ、グリル、と出てくる。
そしてカマスの香草焼きは見事というほかはなかった。
この店は東急の祐天寺駅と学芸大駅の中間で駒沢通りから少し入ったところにある小さなフレンチレストランで、20年以上続いているようだ。
グルメ、特に寿司屋のユーチューブはけっこうな登録数を獲得しているようで，最近見て笑ったのが、鮨が100倍美味しくなるなどと称して仕込を撮影しているものがあった。
奇跡のアナゴと称して対馬のアナゴをさばいたり、アワビの雌貝（びわ貝）を煮たりしている。
まともな鮨屋は当たり前に使うアナゴやハマグリが奇跡になっていて、さりげなくまるひろの白ウニを見せたり、天然の天草の車エビを出したりしているが、常にあるわけではないはずだ、
マグロも小マグロの二番、三番あたりが出てきて、突っ込みどこと満載でした。
昔、「次郎」が雑誌でやっていたことを動画でやっているといったことだろう。
寿司ネタの中で原価が高いものをどうやって安いものにするかの工夫がよくわかる。
これではマグロのカマ下一番を100万で歯を食いしばって買っている寿司屋がかわいそうでしょう。
この店は産地自慢をすることもなく、奇跡のアナゴや九十九里の蛤を出している。
リコッタチーズとフランボアーズのデザートはとても美味しい。
高級魚ではなく、旬の身近な魚を料理して、見事な腕前だ。
概して、和食の職人やフレンチのシェフは寿司職人より目が利かないことが多い。
この店は例外的に目利きなのだろう。
当方は高齢なので、夜は出歩かないことにしている。
よって、山の神とお任せのランチに再訪しようと話している。
