一時期、集中的にここのカウンターに陣取って主人の揚げ方を観察したものだった。普通の豚カツ屋のように熱した油に衣をつけた豚肉をいれるのではなく、常温のラードを浅いフライパンに塗り、そこに豚肉を置いて火をいれる。温まってきたらラードが溶け、豚肉がだんだんと揚げられ、豚カツになるという仕組みだ。油がしつこそうに思うが、そんなことはない。素人でもやりやすい豚カツの作り方だった。
ひさしぶりに訪れたが、その方法は変わらない。じっくりと揚げられた豚カツは香ばしい。変わったのは揚げ手が若くなったことくらいか。
