提案をご相談するお時間を戴きたくてご依頼したら、お鮨屋さんに連れて行ってくださいまして。
最近回るほうですらお鮨を戴く機会が無くて、カウンターのお鮨なんてとっても久しぶり。
お通し(左)のマグロの横隔膜は、捨てていたら中国人のお客様に油の低温調理を勧められたそうで、コンフィ状態のとっても柔らかくて美味な煮付け。
お刺身がわんこ状態で出てきて、日本酒にシフト。緑川の純米が美味しかったなあ←わたしが純米美味しいとか珍しい
お腹いっぱいになってきたところで…昨年からの因縁(笑)という秋刀魚が入ったから、あとで握ってもいいんだけど、塩焼き食べる？と言われてもちろん戴きます！秋刀魚大好き！
ご一緒のお客様は「まだ走りだから身が細めだね」と仰ってましたが、サイズは十分！新鮮で見離れがよく、「まぁきれいに召し上がりますねぇ」と大将の奥様が仰ってくださいましたが、普段お魚食べるの大して上手じゃないんです、私。それだけ新鮮だったっていうこと、内臓も美味でした。
おかげで握りが少ししか食べられなかった…ほろっとしたシャリは控えめのお酢で食べやすい。
大将は大病した後だというのに大変お元気で、こういうお店に一人でサクメシしに来れるようになれるといいんだけどな←まだ夜一人でサクメシってなかなか出来ないのよね〜
