名店を見つけてしまった。
にいがた地鶏が東京で食べられる唯一のお店。
6,000円のコースで、
美味しかったのは当然で、
串と締めだけ書きます。
・ささみ
→梅、わさび、みその3種。ここのわさびは美味い。
・にいがた地鶏のもも
→塩加減が絶妙で、にいがた地鶏のぷりぷり感が強い。
・つくね
→軟骨のコリコリ感とジューシーな肉感がマッチする。
・手羽
→骨を抜いた珍しいスタイルで歯応えある肉。
・ハツ
→弾ける肉質、岩塩のガリっと感とのギャップ。
・かけそば
→鶏と塩の混ざり合いが抜群のスープ。鶏が香ばしく塩味を含んだ脂が相性良い。
岩塩を荒々しく振って粒感を残してるから、
少し串が塩っ辛い部分もあるけど、ご愛敬。
だからこそ活きる大根おろしが甘くていい。
醤油は淡い?白醤油?優しい。
これはいい店。また来ます。
