中華とフレンチの刺激的なフュージョン
渡邉義則シェフが腕を奮うフレンチ×チャイニーズの刺激的なステージ
二子玉川にNewオープンしたSTEAMAN（スチーマン）
入店すると
半円形のカウンターのセンターに積み重なる
蒸篭から大量に立ち上る湯気
店名のSTEAMANも納得でかっこいい
シェフはフレンチ出身で
パークハイアットのジランドールや
表参道のカシータがかつてフレンチだった頃に活躍されたそうです
（どちらのお店も訪問しました）
中華とフレンチのフュージョンにチャレンジしSTEAMANをオープン
いろいろ興味深いお料理ばかりで
アラカルトでいただきました
まずは中華定番スタイルの2品からスタート
鶏の各部位を使ったよだれ鶏と
そして3種類の小籠包をいただきます
プレーン、蟹、烏龍茶の3種類
定番中華と言うシェフですが
フレンチスタイルを感じる
美しいビジュアルで
繊細な味付けながらきちんと美味しくて嬉しい
この2品だけでシェフの実力が分かります
そして面白かったのが
葱餅と釜揚げしらすのピサラディエール
フランスプロヴァンス地方の郷土料理である
ピサラディエール
（ピザ生地に飴色玉ねぎとアンチョビをのせたおつまみ）
と、中国上海起源の葱油餅とをアレンジしたシェフのオリジナル
まさにフレンチ×中華が見事にフュージョン
初めて食べる味わい
甘いタマネギと塩気を抑えたアンチョビを
野菜と一緒にうすーいピザ生地でくるんでパクリと食べます
うーん、これは美味しい
そしてTV等でも話題の黒いエビチリ
楽しみにしてきました
イカスミで仕上げた海老チリで
やはり辛さは抑えて、優しい甘さすら感じるエビ
もちろん食感はプリプリ
最後は
牡蠣麻婆豆腐
山椒がきいてお肉も美味しい
本格麻婆豆腐が嬉しい
その上にうやうやしく鎮座するのは
なんとムニエルされた牡蠣
なるほどー、そうきたか
思わず笑顔で麻婆豆腐ソースたっぷり絡ませていただきます
斬新なマッチング
やはり辛すぎないので牡蠣がしっかり味わえます
フュージョン料理ながら
とっても食べやすくて美味しいSTEAMANのフレンチ中華
フレンチと中華が大好きな食いしん坊の方にオススメです

通常のエビチリとは異なり
エビの素材感がガツン感じられる一品で
めっちゃ美味しい
桜海老とアスパラガスの和え麺
も良かったなあ
ピーセン豆板醤使用のソースの爽やかな辛みと
グリーンの麺とたっぷりの桜海老で幸せになれました
そして
安曇野げんき豚のカルボナード
ベルギーの郷土料理カルボナードを
中華風にアレンジして
黒ビールに紹興酒を加え
トロトロに煮込まれたげんき豚を美味しくいただきました
サービスもとても気持ち良くて
素敵なディナーとなりました
