今回で二度目の訪問です。
とても落ち着いた雰囲気のお店、素材をいかした、繊細で冴えた料理、美しい盛り付けに若手ながらシェフの才能を感じずにはいられません。
イタリアでいろいろ修業されたようですが、和食の料理人の繊細さのようなものを料理の端々で感じます。
花ズッキーニのフリットはモッツァレラとアンチョビが包まれてカリッと揚がっており、その食感がなんともいえず美味。スプマンテがぐいぐい進んでしまいます。
当日お薦めの生のポルチーニのパスタは、乾燥ポルチーニのように強い香ではなく、あっさりとした味わい。ナスとズッキーニとのバランスもよく、ぜひまた食べたい一品。
連れがオーダーしたトリッパもただの煮込みではない、垢ぬけた味わいでした。
今後も通いたいお店のひとつです。
