2019年7月に出来たお店、ずっと行きたかったのですが、コロナ禍で訪問ものびのびになっていました。
まだ気は抜けないものの、対策もしっかりとされているとのことでようやく伺うことができました。
お店の前の青い鶏の看板が目印。
これだけでもセンスを感じます。
店内はオサレな内装のカウンターと奥にテーブル。
今回はテーブルに居を得ました。
今回は、
・お酒好きの方にお勧めシェフのおまかせコース
をお願いました。
お酒はスパークリングワインから開始して、途中にはビールや赤ワインを。
最後にはコースについている食後酒まで。
コースは、
・前菜2品
・パスタ
・肉料理
・パン
・デザート
・食後酒
という充実の布陣。
内容は日替わりとのことです。
この日の前菜としては、
・能登 高農園の野菜いろいろ バーニャカウダソース
・イサキ 花ズッキーニ
でした。
バーニャカウダは野菜の美味しさが際立ち、それぞれ力強い味。
それをしっかりと受け止めるソースも素晴らしい。
パンでソースを最後まで頂きました。
花ズッキーニも一つのお皿でズッキーニの複数の楽しみ方を提供する料理。
揚げた部分にはイサキのつみれが含まれており、またズッキーニ単体部分も同じく食感が良く。
このお皿も料理に合うソースが印象的でした。
パスタは名前は忘れたのですが、玉子と小麦で店内で打ったという細い麺。
パスタ、ソース、トリョフで、繊細な味を作り上げているのが見事でした。
メインはイタリアの豚を焼いたもの。
万願寺唐辛子とジャガイモのミルフィーユが添えてありました。
豚は脂がほどよく残っており、素材の良さが光ります。
その上で最後に表面をパリッと焼いており、表面と肉の中との食感の差が面白いコントラストになっていました。
さらに感心したのは、ジャガイモのミルフィーユ。
一枚一枚を重ねて、一見ショコラのような見た目でしたが、しっかりジャガイモ。
これも食感が興味深い料理でした。
これに合う赤ワインも好きな味。
ソムリエさんには良いチョイスをしてもらいました。
最後は、
・パンナコッタ
・パパ パイナップル
を。
どちらも甘さは控えめで大人のデザート。
これに食後酒をたくさんのお酒の中から楽しみながら選びました。
候補をテーブルに置いて頂いて、説明を受けながら選ぶのはそれだけでもエンターテインメントです。
その食後酒に
・ヘーゼルナッツ
を付け合わせに追加すると、これもなかなかのモノ。
このヘーゼルナッツも人気だそうです。
これだけ食べて飲んでで、1万円ちょっと。
正直もう少しかかるかな…と思ったのですが、高すぎないワインを選んで頂いたことも好印象。
奥沢のレベルを上げてくれるお店。
もっともっと評判になると良いですね。
