いただきましたのは
ハンバーグ150ｇ ドミグラソース 650円 ＋ライス小 160円 計810円 消費税込み
洋食屋さんはバンバーグ、フライもの、煮込みもの、特に、ドミグラスソースに
違いがでるものです。
オープンキッチンでシェフの動きすべてが見られます。
奥様であろう方が注文をうけ、そこから動くというスタイル。
冷えた、ハンバーグのタネをとりだし、すばやく重さを計測。
すばやくフライパンへ。ある程度、表面に焼き色がつきましたら
オーブンへ。これがテクニックですね。
香ばしくて、それなのに、柔らかい仕上がりです。もっとおいしくなるとは思います。
ドミグラスは口にさわるタイプ。たまねぎをわざと残しているんですね。
ライスは特段普通です。
テーブルにはソース？しょうゆ？たしかめませんでしたが、塩のみで、胡椒などもありません。
