二郎インスパイアの有名店【豚星。】で修行した方が独立開店されたこちら。
豚星。さんでは限定メニューで食べれる機会が少なく、なかなかハードルが高い【台湾混ぜ蕎麦】をレギュラーで提供されている（数量限定）ので悩む事なくオーダー。
土曜日20時過ぎに来店
並びなく入店出来ましたが、ワンオペの為回転は遅め。
着丼迄25分
台湾混ぜ蕎麦@1200
「アブラ、ホアジャオ、マヨネーズ」
若干パサ目ながら味がしっかり染みた豚を堪能してから全体が馴染むように混ぜ混ぜして美味しく頂きました。
豚星。比で
・台湾ミンチ少なめ
・豚1枚有（豚星では有料）
・麺上げ時に麺肌に傷を付けない
（傷を付ける事でタレの絡みが良くなる（麺屋はなび談））
麺量・味共に豚星。と同等に美味しかったですが、
上記の麺肌に傷を付ける工程を省いているのはマイナス要因。
台湾混ぜ蕎麦の元祖である【麺屋はなび】さんが拘る工程には明確な意味があると改めて認識。
ワンオペながらデフォルトメニューの多さで大変だと思いますが、一手間の大切さを大事にして頂きたいです。
今後も台湾混ぜ蕎麦目当てでお邪魔させて頂きます。
