挽きたて、打ちたて、茹でたてが売りのチェーンの蕎麦屋さんです。
良くお邪魔していますが、造り手さんによって、幾分か仕上がりが異なります。
私のお邪魔する時間帯は3名のシフト体制の様で、この方が調理の時が個人的に好みの仕上がりという布陣が有ります。
それは時の運ですので、毎回楽しみに伺っております。

久々にお邪魔しましたが、ぶっかけは水道水の温度で麺の締め具合が異なります。
冬の水道水は冷たく、キンキンに麺が締められますが、夏場は若干締め具合が弱まります。
ぶっかけを頂く場合、麺の締め具合は美味さに直結します。
と、違いが分かる程、食べ続けているメニューです。
