等々力駅から深沢方面に10分くらい
住宅地を歩いたところにあります「ひびき」さん。
かの“白いとんかつ”の発祥？店です。
渋谷の支店「げんかつ」は割と有名だけど
本店ってこんなところにあるのね。
マジで意外すぎてびっくりする住宅地。
GW期間中のせいか、
人員不足で客席を減らして対応中とのこと。
潔くていいですね。じっくりと待ちましょう。
注文は
・上ロース定食 ¥2500
ご飯とキャベツは1回だけおかわり無料。
卓上にはソースや塩が盛りだくさん。
個人的なおすすめは
・ヒマラヤ岩塩
・わさび醤油
かなー。
壁の張り紙に食べ方が書いていますが、
・ごま油+塩
は正直イマイチでした。
カラシは小袋で新鮮なんだけど
いちいち開けてくのが面倒くさい。
レモンはありません。
本当に人手が足りてないのね。
3組ずつ捌いてる感じ。
それでも1つ1つ丁寧に作ってるのを感じます。
そんなこんなで上ロースが到着！
いい見た目ですねー。本当に真っ白な衣。

まず豚汁が美味すぎてびっくり。
これはお代わり出来ないんですか？笑
私はベジファーストなんてほっといて
真ん中のお肉からいただきます！

白い衣はサクサクではなくフカフカなのね。
面白い食感。
とんかつって「蒸し料理」なのね。
衣でお肉を閉じ込めて火を通し
じっくりと旨みを凝縮させた料理なんだな。
美味いなー。
次は醤油とわさびでいただいてみましょう。
これも美味しい。
上品なとんかつで肉の旨みも豊かなので
牛かつのような食べ方も合いますね。
「ニンニク味噌ソース」なるものがあるのですが
これはキャベツの方が合うかなー。
普通にソースはないの？と思いました？
ありますが「普通」じゃない。
薄くてトロッとした半透明の茶色いソースが。
フルーツ感が強くてさっぱりとした味です。
これなら塩の方がガツンと塩味があって好きかな。
美味しかった。
急いでるお客さんには向かないけど
のんびりとした休日ランチには最高でした。
