ひらまつやL'ASにいらした高田有基氏が、
オーナーシェフとしてお店をオープン。
店名はシェフのあだ名から取って、
お客様と暖をとる距離感、
団結のダン、
階段のダンと意味を込めて。
店内はDの字のカウンターで、8席。
ディナーのコースは￥8500。
●秋刀魚 柿
丸ごとさんまをペーストにして、
柿のピクルス
●鰤 蕪 カラマンシー
昆布締めにしてサッと炙った鰤、
トマトのジュレ、
薄くスライスしてマリネしたカブ、
カラマンシーのビネガー。
●海老芋 ベアルネーズ
海老芋をお出汁で炊いて、
澄ましバターで仕上げたベアルネーズソース。
●蟹 米
チーズは使わず、
ズワイガニの蟹味噌と少しのバターで仕上ていて、
蟹の味わいがしっかりと美味しい♪
●甘鯛 松茸
岡山県の1本釣りの白甘鯛。
鱗焼き、
茄子の煮浸し、
アサリをベースに、鮪節、ノイリー（ベルガモットのリキュール）。
●仔牛 牛蒡
ボビーヴィールのロースト、
赤ワインのソース、
舞茸、牛蒡、蓮根。
●粟
熊本県の栗、
ミルクアイス、
抹茶のカダイフ、
栗のソース。
冷たいミルクアイスに、
温かい栗をかけて。
●フィナンシェ
焼き立てフィナンシェ、
オレンジのコンフィチュール添え。
ふんわり、ふかふか。
●食後のお茶
ルイボスティーかハーブティーからのチョイスで、
ルイボスティーをお願いしました。
パンは出ませんが、
言えば追加料金でいただく事は出来るそう。
バターなどは控えめなので、
全体的に軽く、
ボリュームも軽めです。
シェフはとても感じが良く、
お忙しい中、
お話もできて楽しかったです☆
