◆出色の一皿に変えて
馬肉の生つくねは
融点の低い馬肉ならではの口中でのとろけに
葱のシャキシャキ食感と濃厚甘めのタレが良く合って、
馬肉といくらの塩麹ユッケは
ユッケのじんわり系の甘みにいくらの塩みとわさびの辛味が利いていて、
串焼きは
レバねぎがサクぷり食感に胡麻油が香って、
牛ハラミは
やわらかジューシーで素直な旨さで、
ガツは
乾いたシャクシャクの口当たりが小気味良くて、
マルチョウ串は
表面はカリ、中はトロリの塩梅が見事。
最後に頂いた牛テール煮も
岩塊のような骨付きのテール肉がホロホロにとろ甘く、
デミグラスソースとは
バゲットをおかわりしたくなるような好相性だった。
見るからに旨そうなものがちゃんと美味しくて、
その全てが酒を呼ぶ味。
今回はワインにしたが、
日本酒の品揃えも非常に魅力的だったので、
次回は日本酒合わせでいきたいと思う。

名店、もつ焼き処 い志いで6年修行された
大江研輔さんによるもつ焼き屋。
新鮮な豚串や牛串を備長炭で焼き上げる。

アラカルトで注文する形。
ドリンクはビール600円より、日本酒90ml 600円より、焼酎600円より、
ワインのグラス1000円より、ボトル3800円より。
別途お通しが300円かかる。
＜雰囲気＞
モダンなもつ焼きの店。
換気はあまり良くないので
匂いがついても構わない服装で行きたい（笑）
