今回は代々木上原駅に移転したエミュさんにお邪魔させて頂きました。
移転する前、恵比寿にあった時とは店構え・雰囲気が、また違う雰囲気になっており料理の楽しみが隠せません。
アミューズ
ブーダンノワールとバナナのバーガー仕立て
恥ずかしながら、バナナだけどうしても食べれないのでイチゴに事前に変更していただきました。
ブーダンノワールは果物と一緒に食べて味わうことが多いですが、いちごと食べるのは初めて。
予想以上にブーダンノワールがトロトロでほのかなイチゴの酸味と合いました。
オードブル
ホタテといくらのタルタル、カリフラワーのブルーテ、モンブラン仕立て
カリフラワーの程よい甘みと滑らかな口触りが、ホタテと蟹のタルタルによく合います。
ハズレなしの王道の海鮮のオードブル料理
美味しいです。
魚料理
スズキを使ったバジルと蟹、サフランの料理
スズキの火加減が抜群でした。柔らかく丁度良い火加減です。ソースに蟹のビスク風になっており少し濃いめなソース。サフランとも良く合い、風味豊かです。
肉料理
ペルドロー、フォアグラ、セップ茸の料理
ペルドロー(うずら )を日本で久々に食べました。
柔らかく食べやすい味に、フォアグラのソース。
セップ茸も風味豊かでした。
チーズ
この時期しか食べれないモンドールを筆頭に、ロックフォール・シェーブルなどなど堪能しました。
好みでかけれるように蜂蜜がついてるのも個人的に凄く嬉しいです。
デザート
今回はデザートがサプライズ仕立てになっており、感無量になってしまいました。
姫林檎の甘さもちょうど良く、甘すぎず最高に美味しかったです。焼き菓子のカヌレは、外はカリッと中はモチモチで美味しすぎてお土産を所望し、わがままを聞いてもらい家族に少し包んでお持ち帰り。
