I participated in a food analyst's ``Meeting to eat first-class soba and think about Edo food culture.'' In the order in which they were served: - Red pickled yellowtail and tuna, roast beef, marinated tuna (?), soba tofu - Smoked egg potato salad - Boiled Gyoza / Dumpling- Extra-thick ham cutlet - Ebina and sweet potato tempura - Soba noodles from Niigata The two types, Sarashina and Inaka, all went well with dry sake. Soba has a chewy texture in rural areas, a little harder than al dente, and when you bite into it, the aroma of soba hits your nose. Sarashina is thin and moist, but it is firm and has a strong soba scent. The soba soup is said to have a spiciness somewhere between Kanto and Kansai, and personally, it was just the right amount of spiciness and went well with either type of soba. What is this refreshing feeling? Is it the unique scent of soba? It's very different from finishing the meal with Ramen or Gyudon (Beef bowl). It was a humorous night where I was reminded of the fun of the stylish Edo people, feeling the seasons with vegetables and fish, enjoying sake with tempura and soba without soba (tempura), and finishing with soba noodles. .
