新中野駅 鍋屋横丁にあります どうげんぼうずさんへ訪問して来ました^_^
辛味噌ラーメンのお店らしいのですが何やら塩そばが美味しいとの事。
券売機故障中の為ビニールラックから塩味玉そば880円の食券を取り着席。前金で支払い暫し待ちます。
そして着丼。
黄金色に輝くスープは表面に浮いた焦がし玉ねぎが塩かえしと相まって焼塩かえしに似ていて香ばしく…
鶏ガラ豚ガラ野菜【主に玉ねぎ】のだしの様に思え仄かに甘味もありつつブラックペッパーのピリ辛さもあり魚介【昆布干し帆立等？】のだしも加わった様にも感じられるが印象は薄い。しかしながらあっさりかつ深みがあり酷さえも感じ塩辛さのない美味しいスープ。申し分ない。
その美味しいスープを纏う平打ち縮れのコシがある麺は食感がとても良くモチモチ。塩スープに良く合いスープを汲み上げて来る。うまい！
低温調理を思わせるチャーシューは柔らかく肉本来の旨味を醸し出し白髪ねぎ、かいわれの若干の辛味もほと走り湯がいたオクラの粘りがそれを止めてくれる。
味玉の黄身まで染みた甘辛さがホッとしのりの磯の香りも良く良い箸休めになっている( ´∀｀)
完成度が高くこのクオリティで880円。店内の雰囲気も良く、とても良く整理整頓されている。本当美味しく得した気分です(o^^o)
