Otaya [Nogata, Tokyo] ~ There is a good sushi restaurant in an unexpected place! ~
◆Change it to a more appealing dish, seasoning the monk liver with yuzu, adding onion soy sauce to the whale instead of ginger or sesame oil, and serving Oyster steamed in oil.Although the snacks are delicious, the nigiri is more appealing in comparison. Is there any? The grip is thinner than the so-called bag shape, and has a graceful shape. The tsubodai nigiri has a crunchy texture and gentle umami, the white squid nigiri has a richness even though it's sharp, and the golden sea bream nigiri, which you might think would be more fatty and umami, is seasoned with salt to finish it all off. The chopped liver blends well with the green onion to create a not-heavy texture, and the Kanpyo rolls have the sweetness of the smoked silver of the Kanpyo and the aroma of the yuzu peel. What makes it special is that the sushi rice is made with red vinegar blended with rice cooked in a hagama pot, and has a crumbly texture that falls apart in your mouth, and the vinegar finish is exquisite. Perhaps because of this, all of the nigiri (even the nigiri with toppings that are usually full of umami) consistently have a crisp cleanliness and a refreshing aftertaste.
