Today, they said they had some leftover sweetfish, so I asked them to grill two of them, and I waited for them to grill with delicious sake. I love sweetfish, and when I was young, I once ate 18 of them at one time. In fact, I think the best parts of sweetfish are the fins > skin > guts > backbone > meat. To enjoy them, they need to be grilled slowly over a high flame. However, in order to shorten the serving time and increase the turnover of the grill, many restaurants grill them all at once over a high flame. In that case, if the fins are not salted, they will burn black, so most restaurants serve them white with salt. This is too salty and inedible. It is a shame that many customers leave their food because the guts and backbone are not cooked thoroughly. I feel sorry for the sweetfish. I am glad that this restaurant responds to my daily complaints. It takes about 30 minutes to grill them. Moreover, it was a little disappointing that the space for two fish was monopolized for 30 minutes over a charcoal fire, but the appeal of delicious sweetfish is irreplaceable. I am satisfied to be able to eat delicious sweetfish again this year. Thank you for the meal.
