結論から言うと、再訪するまでの理由は見当たらないお店
料理のバリエーションは楽しいですし、付け合わせのサラダもメニューによって切り替えたり、一夜干しも自家製で作ったりと面白い試みをしているのが好感がもてます
だとしても、価格への感度があまり高くない。原価、品質に対しての売価設定をこれからもっとシビアにやっていけば伸び白はあると思います
板橋駅前の肉小屋のグループからの独立のようなので、美味しいものを提供するという基本は出来ているのかなとは思います

■カツオのレアカツ
味塩コショウと青のり、パン粉をつけて冷凍か。ソースは、麺つゆとマヨネーズ。これが割と秀逸。カツオが安い時期に仕入れて、刺身やタタキで提供しつつ、一日経ったらパン粉つけて冷凍するってことで歩留まりあげられるかなと
■穴子の一夜干し
香りと旨味がグッと上がってて日本酒のアテとして最高。開き穴子、韓国産でも構わないかなと。それならある程度、安で入ると思われる。一夜干しにして真空パック、冷蔵、もしくは冷凍でも品質担保出来るかなと。一夜干しの際に、塩水でつけた上で、干せば、添えるのは山葵だけでもいけそう
■おばんざい盛り 3点 780円
1.人参しりしり
ひき肉と卵、ゴマが効いた感じ。きんぴらとも差別化できるので面白い方向性かと。原価も安い
2.ネギトロカマボコ
個人的には板わさ好きで。カマボコに半分カット入れてネギトロ入れて香味野菜添えるってセンスは外さない感じ。割と好きです
3.ササミの叩き
鳥ササミと香味野菜、ポン酢、山葵の組み合わせ。外さない。味は弱いので、アテにするならもうちょい濃いめか。原価低めで作れる一品としては優秀だと思う
