私がきちんとしたイタリア料理をいただいたのは、今から20年くらい前、西口シェフがいらした代々木上原の「ブォナ・ヴィータ」でした。
シェフがイタリアから戻られて2006年にオープンした「ヴォーロ・コズィ」。
ヴェネツィア風魚介の前菜盛り合わせには、タコをタコのゼラチンだけでかためた一品が必ずあります。
常に新しい、を求めているのではなく伝統を守ってらっしゃる印象。
初めに出されるチーズをチュイルのようにパリッと焼いたのもスプマンテに最高。
いつかミラノ風サフランのリゾットを食べたいと思いながら、「本日のパスタは」と説明を聞いているとやはりパスタを頼んでしまう。
まして、白トリュフがあると絶対に避けられない。
お茶菓子のセミフレッド も大好き。
いつも変わらぬ美味しいお料理がいただけます。
でも、伺うたびにさらに美味しくなっていると感じます。
手間ひまを想像すると、ちょっと安すぎるのではと心配になります。
