巣鴨にあるフレンチレストラン「chez f.（シェ エフ）」
予約は一年～2年待ち、と言わずと知れた伝説の名店「茶望里」。そのシェフがご引退されて、後を継いだのが、若き女性シェフ“桑迫”さん。お店の名前も同時に、一新されて、スタートしました。
今日は、友人と一緒に新たなシェフにお会いしに伺いました。といっても、以前は、副料理長さんでしたから、2度目です。♪( ꈍᴗꈍ)
メニューは、鶏のもも肉のソテー、特製ハンバーグ。高知県産真鯛のポアレ、サーロインステーキなど。（スープ、サラダ、パンかライス、食後の飲み物付）、追加で、デザートは３００円。
選んだメニューは『真鯛のポアレ』、友人が「鶏もも肉のソテー」、デザートをそれぞれ追加しました。
【サラダ】
「グリーンサラダ」
葉物野菜にガーリックチップ、自家製りんごのドレッシング。ドレッシングが美味しいと、野菜ももりもりいただけます。
【スープ】
「冷製新玉葱のクリームスープ」
玉ねぎの優しい甘さの滑らかなクリームスープ。
ひんやりと冷たく、心地よいです。
【メイン】
「真鯛のポワレ フレッシュトマトソース」
皮目パリパリに、中ふっくらと。さっぱりとしたトマトソースを合わせていただく、暑い日にぴったりの組み合わせ。火入れが、素晴らしいです。
【デザート】
「メロンのグラニテ」
フレッシュで甘いメロンをグラニテにして、バニラアイスと合わせた目にも爽やかな冷菓。
友人のメインも、しっかりボリューミーでした。厨房から、サービスまで、ワンオペにもかかわらず、流れも良くスピーディ。きけば、色々なレストランで学ばれたそうですが、しっかりとした技量を身につけて、これだけのレベルの高いお料理を出されているのだから、素晴らしいです。
