仕事でお世話になっている女史の紹介で、大塚にある『とり勢』さんへ。
本来なら4月にオープンする予定が、このコロナ禍で二ヶ月遅れの6月へとずれ込んだらしい。
そのため、ソーシャルディスタンスに配慮しカウンターの座席の間隔もゆとりを持って取られているため、ゆったりした贅沢な間取りになっている。
焼き鳥は基本的にコースでの提供とのこと。
大山地鶏、黒姫地鶏、信濃地鶏をその日の仕入れ状況によって使い分け、仕入れ先はあの『蒼天』さんと同じところだという。
この日は、大山鶏と黒姫地鶏がメイン。
焼き鳥の火入れに「強火」と「弱火」があるのなら、こちらの焼き場に立つ佐藤大将の火入れは後者。
鶏肉がレア状態なのにふっくらと柔らかく、それでいて芯までしっかりと火が通っている。
大山のササミやハツ、黒姫のレバーやオタフクなんかをいただくと、口の中にジュワっと旨味が広がってその仕上がりの良さに大満足♪
口開けに生ビールを飲んだので、二杯目以降はワインか日本酒かに逡巡していると、大将が日本酒推しだというのでいただいてみることに。
錫のお猪口で飲む宝剣と而今、すっきりして旨いですね。
錫のグラスやお猪口って、飲み物の雑味を無くしその飲み物本来の味わいを楽しめるのだそうだ。
日本酒に疎い私には錫のお猪口なんて、猫に小判・豚に真珠みたいなものだが・・・(笑)
その他にも、森嶋、ダテ・セブン、新政エクリュ、長珍(新聞紙巻き)などをいただきました。
焼き鳥を頬張りながら日本酒をグイッと！
ゆったりしたカウンターで、久々に時間を忘れてゆっくり過ごせました。
