十条：モツ出汁系チャーボンも天津丼も丁寧な作り

なんか十条に行く機会が増えつつあるので、少し開拓を続けることにしました。
４軒目は駅裏に廻り、多福楼の十条店へ。
チャ～ボンは店によって流儀が違う感じですが、十条店はモツ出汁系。
◆チャ～ボン(\990)
DAY－1は、当然チャ～ボン。
食べ慣れた長崎ちゃんぽんは全く別のビジュアル、石鍋で煮立たせて出してくれます。
スープは醤油系の味付けで、所々に隠れた唐辛子がアクセント。
スープ自体は麺・具への染み込みを重視したと思える作りで、たっぷり乗ったホルモンが更に旨味を乗せてくれます。
そこに加わるのが煮込み野菜と柔らかめの細麺、抜群の一体感で、最後まで満足できる味でした。
ホルモン出汁の効いた染み込む美味さの一杯、丁寧な作りの小皿類もセットになって税込９９０円は超お得だと思います。
◆天津丼(\790)
チャ～ボンの美味さにハマってしまったので、ＤＡＹ－２はランチ天津丼セット。
玉子はフワフワ焼きで柔らかい食感、餡も見た目と裏腹にケチャップではない酸味と出汁感を演出した、日本人好みの仕立てだと思います。
天津丼という、その気になれば手抜き可能なメニューも丁寧に作るということは、超真面目な職人さんと認識。
他にも色々と試してみたいという期待を持たせてくれたＤＡＹ－２でした。
店は狭く満席のこともありますが、タイミングが合えば満足感の高い食事ができると思います。

十条周辺の中華、ランチを中心に何軒か廻らせてもらいましたが、技術的に抜きん出ているのが大吉飯店と多福楼だと思います。
ということで、多福楼アゲイン。
◆五目チャ～ボン＋焼餃子
五目チャ～ボンは石鍋チャ～ボン（モツ出汁が効いた汁麺）と似たネーミングですが、料理は全く別方向のサプライズ系。
焼き目を付けた麺を平たい円盤にして、その上に旨味五目餡をかけた予想外のスープＯＦＦ。
見た目も予想外でしたが味も実は予想外、というか予想を超える美味さです。
麺が焼きと揚げの中間の仕上がりで、香ばしいのに噛むと味がしっかり広がり、旨味の強い五目餡をしっかり支えるという趣向で、マヂ美味い。
でもって、焼餃子も予想以上。
まず最初に感じるのが極厚の皮で、噛むごとに純粋に美味く、具なしでも美味いかもと思わせてくれます。
そこに歯ごたえとジューシーさが揃った具が加わると完璧な美味さで、タレなしで一気食い。
大吉飯店が上品なドレスのような繊細な美味さの餃子なのに対して多福楼では野武士系、骨太な美味さの餃子を出してくれると気付かされました。
同じチャ～ボンでもモツ出汁が効いた汁麺と香ばしい麺の美味さを楽しめるスープＯＦＦの別方向を楽しめる店として、そして餃子がガッツリ系でしっかり美味いと再認識しました。
十条店という名前からはチェーン店系に思えるかもしれませんが料理の美味さは本物、凄い職人さんだと思います。
