Daishoken is free of artificial flavorings
I went to Machiya because I wanted to eat Taishoken-style ramen. At Taishoken Kohaku, I had a medium-sized Ramen with extra green onions. The bowls are heated before the noodles are served and are cooked carefully. I've been here a few times, and the taste sometimes varies, but that's part of the charm. ●Soup The soup is a combination of unseasoned pork bone and seafood. It's seafood-based and usually a little salty, but this time it was quite mellow. The taste sometimes varies so I'm not sure which is the default. But it's still delicious I like Taishoken ramen with chemical additives, but the unchemical ones are also delicious. Noodles The homemade medium-thick noodles mix well with the soup. The inside is chewy and the outside is smooth and delicious. Ingredients Char siu, bamboo shoots, and green onions. The char siu is large and has a strong flavor, but it's delicious. The bamboo shoots are soft and the chopped green onions add a nice accent. It was delicious today as well.
Long-awaited Taishoken chain
I wanted to eat Daikichiken ramen, so I went to Machiya and had a medium-sized Ramen for 800 yen at Daikichiken Kohaku. It's been about a year since I last had a craving for regular Daikichiken Ramen. The thick, chewy noodles and the familiar, stable soup are quite salty, making it a hearty dish on a hot day. The pork slices are large and soft. They're not particularly tasty, but Ramen Tsukemen (Dipping Nudle) and tsukemen have a familiar, stable taste that I sometimes crave. I enjoyed it again today.

大勝軒琥珀にてラーメン中盛+ネギ増しをいただきました。
丼は麺を盛る前に温めており丁寧に調理いる。
こちらは何度かお邪魔しているがたまに味がブレるのはご愛嬌。
●スープ
無化調豚骨魚介のWスープで魚介系でいつもはやや塩分高めな感じだが今回はかなりまろやか、
たまに味がブレるのでどちらがデフォルトかは解らない。
それでもやはり美味しいです
化調の大勝軒も好きだが無化調も美味し。
●麺
自家製の中太麺はスープによく絡み
中はモチっとした食感で外はツルっとした喉越しで美味しい
●具材
チャーシューにメンマにネギ。
チャーシューは大きく味はしっかりだが美味しい
メンマは柔めで程よいく刻みネギもやはりイイ感じのアクセント。
本日も美味しくいただきました。
