町屋の路地裏にある隠れ家的なダイニングバーです。
熟成を売りにした珍しいお店さんです。
外から見ると１階のカウンターのお店のように見えますが、
２-３階にはテーブル席があり、落ち着いた雰囲気で良いです。
お気に入りはマッシュルームのおつまみと熟成チーズ盛り合わせです。
マッシュルームは無農薬だそうで、まるごと生で頂きます。
オリーブオイルと塩がかかったシンプルなものですが、臭みもなく
旨味があって美味しいです。
熟成チーズ盛り合わせは、チーズはもともと熟成だよ！というツッコッミは
置いといて、6ヵ月熟成のポーターチェダーチーズ、10ヵ月熟成のコンテチーズ、
18ヵ月熟成のミモレットに、枝付き干しぶどうが添えられてます。
どれも塩味が強すぎず、旨味がしっかりしており、ワインによく合います。
熟成魚3種盛り合わせは、熟成たらこ・ホタテ・マグロと珍しいですね。
