無化調を売りにするお店が本当に多くなってきたが
ほとんどのお店はファーストインパクトがあまりなく
化調をほんの少し入れればバッチリ味がまとまるのにと
思ってしまうことが多い。
だがこちらは無化調でもファーストインパクトがあり
旨味たっぷりだった一杯。
訪問したのは平日のランチ終了間際。
完全な下町の住宅街。
実際に訪問したのは激アツな8月下旬。
運良く行列はなく、すぐに入店。
券売機で醤油ラーメンである「臥龍」を購入。
店内はスナックの居抜きのような感じ。
手揉み麺か細麺が選択可能とのことで細麺を選択。
店主と助手のツーオペで、チケットを渡すと
すぐに調理開始。
卓上調味料は一切なく、約6分後に着丼！
まず最初に目に飛び込んできたのが、
大判のチャーシュー。
その他の具は、メンマ、白髪ねぎ、海苔。
スープはキレイな清湯で一口いただいてみると
鶏と煮干し等の乾物系が合わさっているが
奥行きがあり、とても美味しい！
麺は全粒粉でスープとのバランスが最高。
そして大判のチャーシューとメンマだが、
これまた激ウマで亀有にあった銘店 ののくらの
チャーシューとメンマのよう。
いや、久しぶりに無化調でスープ、麺、トッピング類の
バランス及びインパクトが素晴らしい一杯をいただきました。
他にもいろいろなメニューや限定をやっているようなので
また再訪して今度は連食したいと思います。
