本日の昼食はこちら、久々昔ながらの荻窪ラーメンの系統、前々からチェックはしていましたが、初めての訪問です。
荻窪名店の丸長さんから受け継がれた動物系と魚介系のダシ、深くは知らなかったため「丸長のれん会」をちょっとググり、丸長さんから、大勝軒、丸信、と独立、昭和20年代、鶏ガラ主体だったラーメンに初めて豚骨と鰹節、ザバ節を合わせ現代に至っている、つけ麺も丸長さんが発祥、いうことでした。
丸長さんは何度かうかがいましたが、あの黒い謎の不思議な酸味ある調味料までは丸信さんでは使われていなかったですね。
11:40頃の到着で、満席、5分程度でカウンターに通され、ラーメン大盛硬麺の半チャーハンセットを注文。
待つこと5分ほど、ほぼ同時に両方着丼、スープ一口、魚介系のダシが広がりますね、動物系は豚骨が主なんですかね、柔らかく飲みやすい優しい味、荻窪丸福さんももとは丸長さんの系統なんでしょうか。
麺はかなり太めのストレート、歯応え食べ応え相当あり、つけ麺か、と思うほどですが、スープともマッチし絶品！ チャーシューは硬めのロースかな、バラっぽい柔らかさもあり美味し、チャーハンも昔ながらの塩味、それと紅生姜、美味し！ スープまで完食。
昔ながらの中華蕎麦、高校生のとき、仕事で5年ほど通ったとき、を思い出す、大好きなお味。
