明治17年創業の馬肉料理の「柿島屋」。キリンビールが世に出た年が明治21年というから柿島屋の歴史の深さに驚きである。東京森下の「さくら鍋 みの家」の創業が明治30年、三ノ輪の「桜なべ 中江」の創業が明治38年なので、何れも柿島屋を参考にしたのかもしれない。
江戸時代八王子で生産された生糸を横浜港へ運ぶルートがあり、町田はその中間地点の宿場町として栄えたという。柿島屋は当時の主要な交通手段であった「馬」を取り扱う「馬喰」であったとか。江戸時代から明治時代へと時が流れ交通手段も馬から鉄道へとシフト。柿島屋さんは商売を馬喰から馬肉屋に鞍替え。当時一斉を風靡した牛肉料理は高価で中々庶民にはありつけない。その点馬肉は安価でヘルシーで栄養価も高く大変喜ばれたとか。
この日はホルモン道場からの二軒目ということもあり、自重して上馬刺しと清酒、ぶどう割をオーダー。柔らかな上馬刺しがこのボリューム、鮮度で¥1,350とは驚きである。
次来たときは肉鍋上¥1,800に生玉子、締めにそば玉行ってみたいね。美味しい馬刺し頂きました。ご馳走さまでした。
