町田で美味しい蕎麦が食べたいと思ったら、少し駅から歩きますがこちらの「くに作」へ。歩いて5分ほどの場所ながら、美しい庭園を眺めながら蕎麦を楽しむことができます。
この日オーダーしたのは「くに作 天ぷら5種セット ￥1,650」。基本の冷ざる蕎麦に天ぷらがセットになったメニューです。
蕎麦は十割。山形の出羽かおりという蕎麦粉を使っているそう。十割蕎麦と言うとぼそぼそとした印象で切れやすい印象があるのですが、ここの蕎麦は全くそういうことがありません。細い香り高い蕎麦でつるつるっとすすることが出来ます。
つけ汁は通常の醤油ベースのものとナッツを入れたものの2種類。ベースは同じですが、ナッツが入ることで鰹や昆布を用いた出汁がより引き立つような印象を受けました。もちろんシンプルな方も良いですが、このナッツ入りのつけ汁はなかなかはまりそうです。
蕎麦湯の栄養面の効果などがテーブルに置かれた冊子に書かれており、最後までしっかりとつけ汁を堪能できました。
天ぷらは恐らくその時期によって内容が異なると思いますが、この日は海老・人参・茄子・ピーマン・カボチャの5つ。これを抹茶塩で頂きます。
どれも衣が薄く素材をしっかりと味わうことができる揚げ具合。特に海老は中がほぼ生に近い状態で揚げているので、海老の甘みがダイレクトに舌に伝わってきます。天ぷら専門店も顔負けですね。
町田にあってこの庭園の素晴らしさ、という点に目がいきそうなものですが、やはり主役の蕎麦の味も特筆すべきポイント。今度はゆっくりと夜に食べにいこうかな。
