広島安芸産の牡蠣小町のシャンパン蒸し
→牡蠣の下にレモンムース、牡蠣の周りにはシャンパンのジュレ
かき小町の特徴は厚みと大きさがあること。確かに肉厚で、下のレモンムースと爽やかにボリュームも満足に食べられる。
ホワイトアスパラのバターソテー
→こだわり卵の温泉卵と混ぜながらスプーンで食べると、バターの香りと共にとても美味しい。
本日の魚料理
→鮎のコンフィ マスタードソース
頭から尻尾まで全部食べられる。コンフィの 鮎自体にもう少し下味があっても良い。
→鯛のポワレ ブイヤベース仕立てあさり
鯛は皮がパリパリに焼かれアサリで爽やかに。
肉料理
→アンガス産牛ソテーフォアグラのせ
普通。
→子羊のロースト 花山椒風味
柔らかく上質な子羊。花山椒の風味はあまり感じられなかったが、お肉は美味しい。

→爽やかな初夏のデザート。
