(琥珀→醤油味)
醤油のたった黒いスープに刻み玉葱がスープ一面散りばめられた、八王子系の流れをくむラーメン。元々は六本木でやっていたのだが、店主の出身地の立川に移転。
店は北口を線路沿いに東京方面に5分ほど歩くとカプセルホテルがあるのだが、その1階にある。川崎のおかべに似たような立地だな。
まず一口目のスープ!
この独特の香ばしさにやられる!!ひらたく言えば、すみれの醤油をマイルドにした感じ→つまりやや焼肉のたれっぽい甘みと香ばしさのスープ。ある意味好き嫌いが分かれそうなスープだが、個人的には大好き。この焼肉のたれチックな香ばしさは、鰹節や生姜を低温の濃口醤油で煮詰め、そこに背油、鶏油、サラダ油を大蒜で香付けしたトリプル香油がその効果の起因らしい。
さらに素晴らしいのはハリのある低加水の細麺で、サクサクした食感は噛む事が楽しくなる麺。そしてそれにも増して素晴らしいのが肉厚の肩ロースのチャーシュー。
低温熟成された肉はやわらかながらしっかりした弾力感があり抜群の食感が楽しい。もちろん凝縮された肉自身
もすばらしく美味い。
