今回だけ たまたま だと 良いが…
毎年10軒ほどの農家､から直接仕入れる国産そばの実を
独自の割合でブレンドし、職人が毎朝、
その日に使う分だけを石臼で挽き、打っている。
添加物を一切使わず、
香り・旨味・食感ともに、
そば本来の豊かな味わい深さを引き出して いる
自家製つゆも、
国産の厳選された昆布やカツオを使用しており、
〆のそば湯は濃厚な風味で
和食歴40年以上の職人が
本店の遺伝子を受け継ぎながらも、
立川店独自の味や盛り付けで提供しているそうです
