蕎麦で「達磨」さんといえば、達磨一門というのがあるようで、こちらのお店も同様の門下生。
お店はMichelinビブグルマン2021北陸に選ばれています。
交通のアクセスが良くないので、車かタクシーでしょうか。
メニューはシンプルに蕎麦数種類と天ぷらのみです。
今回はせいろそばと天ぷらをいただきました。
まずは【せいろそば（1,050円）】
更科まではいきませんが、かなり淡い色のお蕎麦。
つるつるとした食感とのどごし、蕎麦の香りもバランスが良いです。
蕎麦つゆはかなりキレのある辛口濃い味のつゆ。
そのためつゆはとても少量ですが、十分足ります。
塩はついていませんが、塩をつけるとより蕎麦の香りを楽しめるかもしれません。
【天ぷら盛り合わせ小（1,300円）】
海老の天ぷらと野菜の天ぷら3種がついてきます。
野菜はアスパラガス2本、茄子、しめじのラインナップ。
どれも揚げ具合がよく、中はトロッと仕上り野菜の旨みでしっとりしています。
海老も想定よりもかなり身が分厚かった。
安くはありませんが、レベルの高さを感じました。
店内は広くないですし、2人で営業されているようなので、注文してから15分は待つでしょうか。
気長にゆったり待つのがいいかもしれません。
