富山駅からトラムで25分程にある岩瀬浜。酒造や観光地もあるレトロな街並みの中、酒造 満寿泉の敷地内にこのお店がありました。
美しい庭園を望むカウンター席は6席だけ。よって予約が取りにくい大人気店です。大将とお弟子さんの調理風景も目の前に、お話もしながらお料理が楽しめます。ベテランの仲居さんもいて料亭風のサービスも受けられます。
ランチタイムとはいえ、酒造の地区なので日本酒を頂きます。満寿泉の酒造りの美味しい水もあります。
お料理は地元の食材、とりわけ新鮮な魚介類をシンプルに提供してくれます。でもその出し方の演出がとても上手いのはさすがです。
目の前で活きているイカを捌いたり、活きているホタルイカが暗闇の中で蛍みたいに光るのを見せてくれ、それを目の前で炭火でじっくり焼いてくれたり。ただ料理するだけではなく、すべてにワクワク感があるのです。
頂いたランチコースは30000円です。
懐石のメニュー構成で、まずはにごり酒が振る舞われました。
★先付
昆布締めの甘海老、ふき、薄味で理想的なお出汁
★煮物椀
富山湾の本ズワイ蟹の真丈。これも京都風の薄味がとても優しく好みの味
★お造り
活きていたイカを捌いて細く切って食べやすい。コリコリで新鮮で甘い。生姜醤油と能登の珠洲の塩と柚で
★木の芽田楽
この豆腐は私にはちょっと大きすぎたかも。
★進肴

ホタルイカを炭火で丁寧にじっくり焼いてくれる。味付け一切無しで天然の塩味と肝のソースが絶品。自然の味がこれ程奥深いとは驚きでした。焼き加減で2種類出ました。
この後八寸でも酢味噌和えが出て、最後にも甘辛いカリカリのが出されまさにホタルイカ尽くし！味わいが異なり飽きることはありませんでした。
★八寸
フキノトウ味噌入り最中。生麩にカマンベール挟んで醤油でからめ焼き。菜の花とからすみ。セロリとじゃこ和え。鮪とアボカド。ホタルイカの酢味噌和えほか。
★焼き物
鰆は脂が乗っていて素晴らしい。山盛りの木の芽も香りが優しく風味がいい。お腹いっぱいになっていたはずなのに、あまりの美味しさに完食！

白菜の菜の花と甘辛いタレが合うホタルイカを載せたご飯。余った分はおにぎりにしてお土産に持たせてくださいました。夜に美味しくいただきました！

百合根あん お抹茶と共に。
数年前に以前のお店に行って気に入り、移転後の今のお店にずっと来たかったので、やっと念願が叶いました。やはり期待通りの素晴らしいお店でした。
