昼食時に訪問。
店構えはこじゃれた感じで、厨房には数名、カウンター前はご主人か？
まずはドノーマルで中華そば（大）を注文。
その間に、店には大勢のお客さんが、カレー？？？？セットがあるのか？？？？
さて、しばしのちラーメン大が到着。
背油が浮いて、いい感じです。
ネギではなく玉ねぎとカイワレ大根がなかなか変化があります。そしてショウガが乗ってました。
何も入れず、スープからいただく。
魚介系がほんのり主調して動物系と相まってなかなかの味わい。
塩分はそれほど濃くない。
そしてショウガを溶かす。
うーーーん！どうでしょうか？？？？？？
これショウガ有りなのかな？？？？？？
私はショウガの風味が折角のスープの香りを消し去っていると思いますよ。
ショウガの効果は臭み消しとすれば、このスープにショウガは不要。
脂っぽいのが苦手であっさりと食べやすくしたいのであればOKですが、せっかくの魚介系のスープの香りも全て消えてなくなっています。
残念です。ショウガは別皿で出すべきです。あくまでも私の好みですが。
繊細な魚介系の風味を生かすということが大事なのかと。
さて、カイワレ大根はアクセントで良いですね。
ずっと考えているのですが、ネギを使わないという意図はどこにあるのか？
その代わりにもっと匂い消し効果の高いショウガを入れている・・・・・？？？
誰か教えてほしいですね。
メンは小麦の風味が感じられるストレート系で良いし、チャーシューもよい感じです。
もう一度、食すのであれば、ショウガは別にしたものをお願いしたいです。
