井波彫刻で有名な木彫りの町にある蕎麦屋。
瑞泉寺の参道を上がって、一つ手前の道を右に入って、左に折れると左側にある。
自宅改造型の蕎麦屋らしく、靴を脱ぎ、右側の座敷に入ると、右がカウンターとその奥が調理場、左が和テーブルになっている。
蕎麦は一種類なので、天ぷらそばを冷たい蕎麦で注文した。
蕎麦はエッジが立ち、水切り良く、切りむらや端切れは見られない。
蕎麦の味と香りは十分あり、甘みも十分だ。
薬味はネギとわさびで、わさびは良くない。
辛汁は甘めで可もなく不可もない。
蕎麦湯はトロッとして風味がある。
蕎麦切りは綺麗で申し分ない。
蕎麦の前に出された揚げ蕎麦はとてもおいしい。
油切れもよく、これだけ蕎麦の味のするものは珍しい。
地場産の蕎麦と書かれていたが美味しい蕎麦だ。
富山県は名前の通り、山が豊富だ。
そのためか、八尾産の在来種だけではなく、いろいろな地場の在来種があることが今回の訪問で分かった。
数年前に、富山の在来種は美味しいと「紫仙庵」に話したら、彼は丸岡在来種を注文する北陸の大手製粉所に聞いたらしい。答えは福井産と大して変わりはないということだった。
今回、二回目の富山訪問で、福井産の蕎麦とは大きく異なるという印象を持った。
おそらく、収穫量が少なく、この店のように地産地消で県外には出回らないのかもしれない。
製粉所が面子にこだわって、いい加減なことを言ったのかもしれず、商売が絡むとそんなこともあかもしれない。
