串は全て塩にしました。つくねはねっとり系です。かわは表面の脂がしっかり落ち中身は適度に残ってます。脂の煙で燻製になってます。レバー、ねぎみはしっとり焼けてますがタレが良いかも。ももはやっぱり塩で良かった。せせりは歯ごたえと脂のバランスが良く塩と合います。ハツはやや臭みが残っておりタレの方が良いと思います。砂ずりは噛むと塩と肉汁が合体して旨いですが臭みがあるので、砂ずりはからあげの方がおすすめですかね。臭みは無く味付けが塩辛くてビールに合いますよ。ご馳走様でした。
