大将がかなり癖があり、私は苦手でした…。
ここに詳細を書くと面倒なことになりそうなので、気になる方は個別にお問い合わせください、
「紀南の食材を中心とした地産地消型。とは言え、地元の人でも知らない食材がとても多く、都会では簡単に出会えない食材を食してもらいます」とのこと。
とは言え、個人的にはそんなに珍しい食材ではなかったなぁ。「メイチ鯛食べたことないでしょう」と言われましたが、うーん、鮨つぼみさんで頂いたなぁとか。フィンガーライムもカメノテも食べたことあるなぁ。
あと、私は別に希少食材にそこまで重きを置いていない。それはあくまでも美味しいものを作るための手段であって、目的にはならないと思う。
