金沢〜神戸〜和歌山への1人旅、4日目の夜はこちらへ。
電話にて15000円のコースを予約。
出身や好みや食べたい食材などを聞かれるので事前にHPを見て予習してから電話する事をお勧めする。
数人でシェアするような天然鰻などは難しいとの事だったので好みを伝えて店主お任せでお願いした。
祝日の19時30分からの席。
先客はテーブル席の家族連れのみで締めのご飯が出てきたところ。
カウンターは私1人ですぐに貸切状態に。
田辺の地ビール、あとは冷酒をいただいた。
いただいたものは以下の通り。
●8寸
田辺のアーモンド、ヒジキの白あえ、揚げ栗、いちじく、ハモの笹寿司など。
●天然クエのお造り
1週間熟成された身と、焼いた皮と胃袋をイタドリの花を振りかけて。
水分の抜けた身は旨味が感じられ、真妻の山葵がいいアクセントに。
●鮎の塩焼き
頭からガブっといただいた。
燻した笹の葉の薫りがとてもいい。
●蒸しウミヒゴイのお椀
唐草豆腐の上にウミヒゴイのふわふわの身。
出汁も美味い！
●草履エビの天ぷら
中はレアな絶妙な火入れで身は甘くて美味しい。
最高。
●稲荷那須焼き
すっぽん味噌が風味豊かで絶品。
ここでコースは最後だったが店主おすすめでもう一品用意していただいていたらしく、追加で。
●天然クエの味噌漬け焼き
銀むつとかよりも歯応えがしっかりしていて味が染みて美味しい。
●カメノテの炊き込みご飯
土鍋の炊き立てで。
最高。
●デザート
序盤から貸切状態だったので、こちらで店を開かれた経緯や食材に対する思いなど色々なお話をさせていただいた。
こだわりもクセも半端ない（笑）。
天然のクエは別として、草履エビやウミヒゴイなど生まれて初めて食べる食材を最高の形で堪能させていただいた。
南紀でとれる海や山の幸、それを最高の状態で堪能できる場所。
本鮪や車海老は出て来ません。
また季節を変えて伺います。
