平日のディナーで訪問。
完全予約制。
当店のHPには、紀南食材の数々がレア度とともに掲載されており、予約前の確認が必須となっている。
電話での予約時に、食べたい食材や予算感をリクエストするシステム。
全国各地で4,000軒を超える店を食べ歩いてきたが、当店ほどオリジナルスタイルを貫いている店は類を見ない。
大将と女将の2名体制。
大将は食への情熱がほとばしっており、共振すれば高い満足感が得られる。
女将は穏やかで、大将とのバランスが取られている。
