You can't underestimate this store just because it's a chain store. It's refreshing to be able to encounter ingredients and seasonings that I'm not familiar with in Yamagata. You can taste the difference of the land. The base ingredients are [buen bonito], [kibinago], and [Hakata local chicken] (beef and pork are also used, but they are omitted). The seasonings were also different; the miso on the raw cabbage was sweet and salty, and the soy sauce was sticky and salty, which was unusual.・Makurazaki Buen Bonito Dashi Chazuke This was my favorite dish. The tuna is pickled and is so delicious that you can eat all the rice without adding the soup stock. Others will go quickly.・Hataki Hakata chicken This is an unusual dish for someone like me who doesn't eat raw chicken. I wrapped the onion slices under the chicken and ate it with ponzu sauce. I also ordered fried chicken wings because I preferred them grilled. When you eat it with seasoning, the flavor becomes even better (*^^*) ・First time trying to namero the bird! It's a salty dish made with Hakata local chicken, miso, and seasonings. It doesn't go well with rice, so I think it should be paired with sake.・Kibinago sashimi was recommended. It looks like there are some bones left. It has no taste, so it depends on the seasoning.・We received fried kibinago pickled in vinegar as a service. I liked the cooking method and it was delicious (^o^)/ All the staff were fresh-faced, approachable, and very kind. We also have a unique system. You will be given a promotion card, and every time you visit the restaurant, you will be promoted and served an appetizer-sized meal. Although it's a hassle to have a card (^^;;I want to go there again.
